What You Need
9 oz frozen spinach, thawed and drained
1 (14 oz) can quartered artichoke hearts, drained
8 oz cream cheese – low fat works great
3/4 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
pinch of cayenne pepper
1 Tablespoon of dried onion flakes
1/4 cup milk
pinch of pepper and salt
What To Do
Use can you a crock pot liner if you would like – but I did not and I had no problem cleaning my crock pot
Place all the ingredients into the crock pot and place lid on the crock pot and set to high
After one hour mix the ingredients together
Cook for 1 more hour – you can top with a little more Parmesan
Enjoy!

I just made this tonight for my Tupperware party, tho instead of using spinach I used blanched kale. It was SO GOOD!!! We will definitely be making it again! To blanch kale, you cut the leaves off, removing any tough pieces of stem, then chop, place in boiling water about 1-2 minutes, then immediately transfer to ice water. Strain the kale, and squeeze the water out just like to you would do for spinach. It is a slightly sweeter flavor than the spinach, and better for you!

Is this okay reheated? I would like to bring it to a party, but we have to travel in the morning and wouldn’t be able to have it sit in the crockpot in the morning prior to. I’m wondering if I could cook it up the night before and just plug it in to warm it up once I arrive and still have it taste alright? But it sounds awesome 🙂

I haven’t cooked a lot of sticky recipes but I found that once your food is cooked and out of the crockpot, just fill it with water, add a little soap and put it back on high for a half hour to an hour…simmers any residue and you just use a dish brush to scrub out (the water is going to be really hot) and clean up is pretty darn easy!
