I just made this tonight for my Tupperware party, tho instead of using spinach I used blanched kale. It was SO GOOD!!! We will definitely be making it again! To blanch kale, you cut the leaves off, removing any tough pieces of stem, then chop, place in boiling water about 1-2 minutes, then immediately transfer to ice water. Strain the kale, and squeeze the water out just like to you would do for spinach. It is a slightly sweeter flavor than the spinach, and better for you!
If its okay with you I would like to feature your recipe, linking to you and giving you full credit, next month on my blog.
    Thanks!

Ok, this may be a silly question but does the spinach have to chopped or anything? Also, would fresh spinach work as well?

I’m wondering if I could cook it up the night before and just plug it in to warm it up once I arrive and still have it taste alright? But it sounds awesome 🙂

[…] I really love spinach artichoke dip. My family calls it Spin Dip for short. When we go out to eat and want an appetizer we usually order spin dip. We’ve bought spin dip from the stores, but there’s always something a little off. They either didn’t drain the spinach, there’s too much artichoke, too much cream cheese, etc. ok ok enough about me and my family. Here’s the recipe. […]

I haven’t cooked a lot of sticky recipes but I found that once your food is cooked and out of the crockpot, just fill it with water, add a little soap and put it back on high for a half hour to an hour…simmers any residue and you just use a dish brush to scrub out (the water is going to be really hot) and clean up is pretty darn easy!
