Ingredients:
1 pound chicken breasts, cut into small pieces
4 cups chicken broth
1 medium onion, diced

1 teaspoon turmeric
1 teaspoon paprika
1 teaspoon chili flakes (optional)
4 ounces rice noodles
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh green onions
Instructions:
Heat the vegetable oil in a large saucepan over medium heat. Add the diced onion and minced garlic and cook until the onion is translucent, about 5 minutes.
Add the chicken pieces to the pan and cook until they are no longer pink, about 5 minutes.
Add the chicken broth, fish sauce, turmeric, paprika, and chili flakes (if using) to the pan and bring the mixture to a boil.
Reduce the heat to low and add the rice noodles to the pan. Cook the noodles until they are soft, about 5 minutes.
Stir in the chopped cilantro and green onions. Serve hot.
