This time of year fresh limes are fairly easy to get inexpensively and this particular recipe combines the flavors of fresh lime, zesty soy sauce, garlic and just the right amount of honey to make a fabulous marinade.

You’ll Need:
* 3 tablespoons soy sauce
* 2 Tbs. honey
* 1 tablespoon vegetable oil
* Juice of 1 Lime
* 1 teaspoon minced garlic
* 4 skinless, boneless chicken breast halves

In a small bowl combine soy sauce, honey, vegetable oil, lime juice, and garlic.

If you want to have grilled breasts, Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes. If you prefer kebabs, as are pictured, cut the chicken into large chunks, skewer onto bamboo sticks that have been soaked in water for 5 minutes, and marinate for at least 30 minutes.

For a slightly zestier version, add a teaspoon of Freshly Chopped cilantro to the marinade.

Grill on medium high heat for 6 to 8 minutes on each side, until juices run clear. Serve with fresh salad, steamed veggies, baked potato or any of your favorite sides. For variation, try marinating shrimp, (which will take 2-4 minutes to grill in all!)

  3. if i were to cook these in the oven or broiler on skewers how long should I cook them? I’m trying to learn to cook chicken better, i tend to dry it out and burn it on a grill and I don’t even have a grill right now, just a gas stove.

      You are cooking your chicken way to long. Chicken does not take that long to cook, so take it off the grill or out of the oven as soon as it’s finished cooking. Keep in mind you don’t want it to be pink… You will find a big difference in tenderness.

  12. 1) red flecks are probably a bit of red pepper (guessing)
    2) on the person trying to learn to cook chicken better – let it come to room temp before putting into the broiler/ pan / grill. Putting ice cold meat onto a hot grill tends to make to tough when you cook it.

  15. I found this recipe a few months back, and it is hands down my FAVORITE meal ever. It’s so easy and delicious. I add bell peppers and onions to the skewers, and serve it with white rice and balsamic roasted brussel sprouts. It’s just the best!
