Can't get Dale's Seasoning where you live? No problem! This DIY version is easy to make and tastes like the real deal. Dale's is famous in the southern US. It's a great as a marinade or baste when grilling meat or poultry. It's especially delicious when used with steaks. You can use fresh garlic in place of the garlic powder but the seasoning mixture shouldn't be kept more than a week then.

ingredients

3 cups soy sauce
1/2 teaspoon liquid smoke
1/3 cup Worcestershire sauce
1/2 teaspoon ground ginger
1 teaspoon salt
2 tablespoons sugar
1 dash black pepper
1 dash paprika
1 teaspoon garlic powder

directions

Combine the ingredients in a bowl and whisk well with a wire whisk until incorporated.

Store the mixture in a covered container in the refrigerator for up to 2 months.

Use as a seasoning or marinade for steak, chicken, pork, lamb, fish, and vegetables. Marinade for 10-15 minutes (you don't need much longer than that).

recipe tips

For a richer flavor, add a tablespoon of brown sugar.

If you have fresh garlic, you can use it instead of garlic powder. Fresh garlic will give a more intense flavor.

This seasoning can also be used in stir-fries.

Try using this marinade for vegetable skewers or tofu for a vegetarian option (make sure to use a vegetarian Worcestershire sauce).

If you're using this as a baste, reserve some of the seasoning before marinating the meat to avoid cross-contamination.

Experiment with adding different herbs or spices to customize the seasoning.

common recipe questions

Is it necessary to use liquid smoke in this recipe?

The liquid smoke adds a distinct smoky flavor, similar to the original Dale's Seasoning. However, if you prefer not to use it or don't have it, you can omit it, but the flavor will be slightly different.

Can I substitute the sugar with a sugar alternative?

Yes, you can use a sugar alternative like honey or agave nectar. Keep in mind that this might slightly alter the taste. You can also use a substitute such as Splenda (make sure to use a heat-safe substitute).

How long should I marinate the meat with this seasoning?

Marinating for 10-15 minutes is usually sufficient, as soy sauce is quite strong and can overpower the meat if left for too long. Do not marinate for more than 8 hours.

Can this seasoning be used as a sauce or dip?

While primarily used as a marinade, you can also use it as a sauce or dip, but you might want to dilute it as it's quite concentrated and salty.

Is there a way to reduce the sodium content in this seasoning?

To reduce the sodium, you can use a low-sodium soy sauce.

How should I store the leftover seasoning?

Store it in an airtight container in the refrigerator for up to 2 months.

Worked very well as a replacement. Just have to make sure it's all mixed very well and dissolved. I added some Lawry's salt instead of plain salt for more kick.

This is great. Tastes just like the real thing. I can't find the real thing in Israel so this is a life saver. 🙂

As a long time southerner who recently moved north of the mason dixon line I was thrilled to find this copycat recipe for Dale's. It's a staple ingredient in the south when grilling. My steaks had been lackluster since moving because I couldn't get Dale's up here. This recipe is dead on exactly right. Thank you from this southern guy who was missing a good steak!
