Let’s be honest – we all love going to IKEA not just for the furniture, but for the Swedish meatballs! Those famous meatballs are the highlight of any trip to that store, and I’ve now mastered the easiest (and more delicious) at home version with chicken!

While there are an abundance of bases that you could serve these meatballs over, Mashed Potatoes are always my favorite! The way that they really soak up the sauce is heavenly. Really, once you try this savory sauce, you won’t want to miss any of it.

How to make Swedish Meatballs with Ground Chicken

  1. Combine the meatball ingredients.
  2. Roll the meatballs and place them on a prepared baking sheet.
  3. Bake the meatballs.
  4. Melt the butter and whisk in the flour.
  5. Add chicken broth, dijon mustard, sour cream, and parmesan cheese to the mix.
  6. Stir everything together to combine.
  7. Once the meatballs are cooked, move them to the saucepan and simmer them for 5 minutes.
  8. Garnish with parsley.
  9. Serve with mashed potatoes (or another base of your choice) and cranberry sauce on the side. Enjoy!

Can I just use frozen meatballs with this sauce?

Sure, but you should know that frozen meatballs won’t be nearly as good as these homemade ones! Typically, frozen meatballs turn out dry and lackluster when it comes to flavor.

Avoid disappointing meatballs by making an easy batch of fresh ones!

Will other meats work with this recipe?

Yes! While I prefer chicken meatballs, you can follow this exact recipe with ground pork, ground beef, and ground turkey. Or even a combination of different meats!

How long will they stay fresh?

In an airtight container in the fridge, Swedish chicken meatballs will stay fresh for up to 3 days. Make sure to save all of that sauce, too!

  • Use a scooper to make sure all of your meatballs are the exact same size. That way, they don’t just look the same when presented, but they’ll also cook evenly.
  • For a lighter fare, serve these chicken meatballs and sauce over zoodles instead of potatoes, rice or egg noodles.
  • Do you really love cheese? Sprinkle a little extra parmesan on the final product! It’ll melt wonderfully into the warm sauce.

Ingredients

For the Meatballs:

  • 2 pounds ground chicken
  • 1 cup Panko breadcrumbs
  • 2 eggs
  • 1 medium onion finely diced
  • 1 cup Parmesan cheese shredded
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ¼ teaspoon ground nutmeg

For the Sauce:

  • 6 tablespoons salted butter
  • cups all-purpose flour
  • 4 cups chicken bone broth
  • ¼ teaspoon black pepper
  • 2 teaspoons Dijon mustard
  • ¾ cup sour cream
  • ¼ cup Parmesan cheese

Instructions

  • Preheat oven to 400°F and line a baking sheet with a silicone mat.

  • In a large bowl, combine all meatball ingredients by hand.

    2 pounds ground chicken, 1 cup Panko breadcrumbs, 2 eggs, 1 medium onion, 1 cup Parmesan cheese, 1 teaspoon garlic powder, ½ teaspoon sea salt, ½ teaspoon black pepper, ¼ teaspoon ground nutmeg

  • Measure and roll approximately 40 (1 inch) meatballs and place on prepared baking sheet.

  • Place baking sheet into preheated oven and cook for 30 minutes.

  • In a large sauce pan over medium heat, melt butter and whisk in flour. Cook for about one minute until bubbly. Add chicken broth, pepper, Dijon mustard, sour cream, Parmesan cheese and stir to combine. Once a low boil is reached, reduce heat to low and continue to simmer the sauce until meatballs are done cooking in the oven.

    6 tablespoons salted butter, ⅓ cups all-purpose flour, 4 cups chicken bone broth, ¼ teaspoon black pepper, 2 teaspoons Dijon mustard, ¾ cup sour cream, ¼ cup Parmesan cheese

  • Once meatballs are ready, immediately move them to the sauce pan to simmer for 5 minutes.

  • Garnish with parsley and serve with mashed potatoes and cranberry sauce.

Notes

  • I recommend a silicone baking mat instead of cooking spray to limit the amount of oil on the baking sheet. But if that’s all you have on hand, cooking spray will work just fine.
  • These meatballs can be served over rice, mashed potatoes, or noodles. Our favorite way to serve this is with mashed potatoes and cranberry sauce, just like at Ikea.
  • Use a cookie scoop to measure out equally-sized meatballs.
  • This dish can be frozen in a freezer bag once it has cooled to room temperature. To thaw, place in a bowl of water until the bag releases, then transfer to a pot on the stove, or heat them up in the slow cooker.

Storage: Store chicken Swedish meatballs with sauce in an airtight container in the refrigerator for 3 days, or freeze for 3 months.

    I agree with another commenter they sauce was bland. I did not have fresh parmigiana. Just. I did add some shredded parm from store I added onion powder to the sauce which helped.
