CHEWY Caramel Corn, Not “Crunchy”

Now, this caramel corn recipe is SO much different than what you buy at the store.

It’s a chewy (not soggy) caramel corn, rather than hard crunchy caramel corn that you may be used to/expecting.

But the BEAUTIFUL thing about this caramel corn is that it lets you encapsulate (yeah, that’s the only word I could think of at the moment for some reason) the butter and vanilla. Really, it’s amazing.

Homemade Popcorn in the Microwave

To make your own popcorn (instead of using microwaveable bags, or going to the trouble of popping in oil, etc.) you should check out my homemade popcorn recipe to see how we make it with brown paper bags! So easy.

However, instead of buttering/seasoning like I did over there with that recipe, only pop the corn and head back over here to finish it off with the caramel sauce.

This caramel corn is such a treat in our house. But I really have to limit myself and just “walk away” at some point, or I’ll make myself SICK eating all of it.

When it cools, if you have some left over after snacking (which has NEVER happened in our house), store in an airtight container.

But we prefer it warm, and fresh.

Can You Bake This Caramel Popcorn?

I’m sure you can. I may actually try it sometime just in case other’s prefer more of a crunch type of caramel corn.

But really, it’s hard to stray from this trusty goodness.

However, if you want to bake it, I’d try a low oven temp (say around 200 degrees or so) and bake it for 15 minutes, give/take, to see if it has reached your desired level of crunchiness.

If not, toss/stir the popcorn and add an additional 20 minutes of bake time. Do this until it reaches the “crunch” that you like. (An hour of bake time is pretty common in other caramel corn recipes.)

Thank you so much for coming by! Enjoy your caramel corn, and let me know when it’s ready. I’ll be right there…

FAQs

Why is my homemade caramel corn chewy? ›

Caramel corn will taste soft and chewy right out of the oven. Give it some time to cool. If it's still tasting soggy after 1–2 hours of cooling at room temperature, you may have under-baked the caramel corn. 1 hour in the oven is usually plenty.

Why is my caramel corn not crunchy? ›

The longer you cook the syrup (the mixture of sugar and water the forms the base of the caramel sauce), the crunchier your popcorn will be. For very crunchy popcorn (my favorite!), stop cooking when you see the first wisps of smoke coming from the sugar mixture.

Why is my homemade caramel corn grainy? ›

Why is my Caramel Corn Grainy? Grainy caramel (or crystalized caramel) happens when the sugar crystals in the caramel seize up or cling together.

How do you soften chewy caramel? ›

If caramels are too hard, you can try placing them back in a saucepan, adding a couple tablespoons of water and stirring until the thermometer reads 242°F.

Can you fix sticky caramel corn? ›

If you like gooey/sticky caramel corn, give it a sprinkle with a good pinch of kosher salt, let it cool and start eating! If you like it crunchy, keep going. To make crunchy caramel popcorn, pour it (pile it) onto a parchment-lined baking sheet and place it in the preheated oven for 20 minutes.

What thickens homemade caramel? ›

To thicken a caramel sauce, use one tablespoon of cornstarch or tapioca starch (sometimes known as tapioca flour) and one tablespoon of water per cup of caramel. Then simmer the caramel, stirring it constantly with a wooden spoon until it becomes thick.

Why is my caramel corn soggy? ›

Generally, the caramel will have a higher 'water activity' than the popcorn. As a result, if you leave the popcorn for a while, moisture from the caramel will migrate into the corn. This causes the popcorn to lose its 'crunch' and become soft and chewy.

What does vinegar do to caramel? ›

Add acid. Acid ingredients (like vinegar or lemon juice) can help prevent re-crystallization which causes caramel to become grainy. Acid physically breaks the bonds between the glucose and fructose molecules that form sucrose and ensure that it stays apart.

What causes chewy corn? ›

The most likely culprit of that blah, starchy, diluted chalk water flavor and hard, dense texture is that the corn is too old, and has had time to dry out and convert some of its sugars to starches.

Why did my caramel popcorn turn out chewy? ›

A granule of sugar, over-mixing, or uncooperative clumps of sea salt can turn caramel from a glossy, shiny confection into a dull grainy heap of chewy, brown sugar crystals. Candy making, or in this case caramel popcorn making, involves a significant amount of chemistry.

Why is my caramel corn bitter? ›

Be very careful as you heat your caramel. Follow the recipe carefully, and never melt your caramel on your stove's highest setting—it will cause the caramel to scorch and taste burnt. Once it gets a burnt or bitter flavor, it can't be saved. Luckily, sugar is inexpensive, so you can always start over!

Why do you put an egg in the pan when making caramel popcorn? ›

While some people said that she added the egg to absorb extra heat, others had different views. "Whole eggs absorb excess heat so it's an easy way to regulate the temperature balance of the other ingredients," a user wrote.

Should you stir sugar when making caramel? ›

Swirl, don't stir: While slow, deliberate stirring will help the sugar dissolve evenly, you want to stop stirring once it has fully melted.

Why does my homemade caramel taste bitter? ›

The temperature of the caramel can rise so rapidly that it is hard to keep it in the desired temperature range, shown above. As a result, the caramel could burn and taste bitter.

Why is my homemade popcorn chewy? ›

Why is my popcorn chewy and rubbery? A top reason popcorn turns out chewy is because steam gets trapped in your pot when the popcorn kernels are popping. Fix this by using a well-vented lid or leave the pan slightly open to make a light and crispy popcorn.

How do you make popcorn less chewy? ›

"Chewy" popcorn is a normal characteristic when using the Hot Air Popper. It may give the perspective of being stale as well. To attempt to alleviate this, we suggest that you hydrate your corn prior to using. You perform this by adding 1 teaspoon per 1 cup of corn into an airtight container.

Why is my caramel gooey? ›

Certain ingredients like corn syrup can make it sticky. Not cooking the candy all the way to hard crack stage can make it more sticky. High humidity in the air can make it sticky.
